Demo of Call of Duty 2 is entertaining for a while if you keep making it harder each time you beat it. The demo of Quake 4 is also nice, I haven't reached the end yet, but I haven't played for long yet. Oh yes, Halo demo. Those are all out for Mac, not sure about Windows. I have been on a "download the demo for all the mainstream FPS's I can find" spree.
For good graphics, those are the way to go, methinks. For worse graphics, there are all sorts of things to look at, and most of them aren't half bad. Example: EV Nova is all pre-rendered in less than perfect color quality, but look at it. It's not all that bad. In fact, it is one of the better looking games you can play on anything because it is pre-rendered sprites, meaning it doesn't get better looking, but on a slow computer it looks fine.
Basically, all FPS games come out on Windows before Mac. So if it's on Mac, it will be on Windows. The Quake 4 demo is good, but I haven't beaten it because it decided to stop working a few months ago, and I can't fix it.
