Recording through Mac Audio is fine, no problems.

However, recording through Internal Microphone the play back is
1) very choppy (cuts in/out at a high frequency, and
2) plays back faster than real time.

Suspecting it might have been the Quicktime player that was at fault, I opened the file in iTunes, with same result. I then tested an internal mic recording wth QT Pro, and it's fine.

It sounds like you may have some conflicting bit rates. I'd check your input settings in the Audio MIDI Setup in your Utilities folder. I would also delete your "com.ambrosiasw.wiretap_pro.plist" from your Home/Library/Preferences folder and start with some fresh default settings.
