I just downloaded Snapz Pro X 2 (several hours ago) and attempted to record a plugin demonstration for Escape Velocity Nova. However, the recording semi-froze during play. The main play screen froze on a single frame, but the map kept animating just fine, and there was no problem with sound. I'm relatively confused, and hoping that Snapz Pro works with EVN, because I've been hoping to record this plug demo for a while.

The recording was excellent while EVN wasn't running, smooth as silk even at 1440x900. The problem only arose while I was actually trying to run the program.

Try checking that "Smoother (but more CPU-intensive) capture" checkbox. It seems to put Snapz into a mode that lets it correctly capture EVN.

Edit: it works. However, it becomes pretty choppy. I'll keep playing with settings and see what I can do.
