If they are creating the game with CGE then their game certainly should be available for the mac, since CGE has an option to build the release of the game for both the Mac and Windows platforms. Granted, the company may choose to only build the release for Windows, but there is no "porting" necessary to build a release in the other platform under CGE.

It would be an incredibly stupid move for Hypermedia to make their game PC-only when CGE is Mac-only. They're going to want to make a Mac version of this game, if only because every CGE user will scream like stuck pigs if they don't. Besides, they announced this game on the Ambrosia Web Board, and most of the people around here use Macs. They will profit a lot from a Mac version.
And hyper: If you're looking for help with the game or something, go to the Coldstone web board. People with Coldstone experience are much more likely to notice if you post there.

Who knows. Maybe they just want it for the Windows market but they have to make it on a Mac/ I don't know.
