Why can't I start from a level after I beat that level?

You can only start from a level if you beat that level after having started from the very beginning. So, if you play all the way from the beginning to level 4, you will be able to start from level 4 next time. But, if you then start from level 4 and play all the way to level 8, you will not be able to start from level 8 until you beat it having started from level one.
