Every time I sync my iPhone with iTunes I lose the ringtones iToner has added - what can I do?

iToner must be installed (demo is fine) on any computer that is being used to sync your iPhone. If not, your ringtones will be unavailable after syncing. Sync iToner with your original Mac and install iToner on the other machine, and you should be fine.
If you are syncing with a Windows based computer, there is currently no solution.
