How do I change camera angles?

Use the change-camera key (default key - c) to change the viewing angle of the camera during a race or in the Replay.  Once you have crossed the finish line you can press the view key (default key - v) to watch the other racers.  Then you can use the change-camera key to view your competition from every angle.
