Why can't I capture movies of Keynote in presentation mode?

Provided you have Keynote 3 or higher, you can! Go into the Slideshow Preferences of Keynote and turn on the option titled "Allow Exposé, Dashboard and others to use screen". Earlier version of Keynote do not have this option.
