My AAC recordings always save at a lower rate than I set them to - what can I do?

The sample rate for an AAC file is determined by the Output Sample Rate set in the Options instead of the Rate set in the Settings.  So open the WireTap Pro preferences, click on Format, then Settings, then Options.  Set the Output Sample Rate, click on Ok to save the Options then Ok to save the Settings and your AAC will record at that rate.
