Can WireTap Studio record both sides of a VOIP call, like Skype?

It sure can. Set one source menu to Mac Audio to capture the other side of the conversationton, and the other source menu to the microphone you are using to record yourself. You also need to make sure that your VOIP application's output matches what you have set in your System Preference > Sound > Output. WireTap Studio will save both sides of the conversation as separate tracks in the same recording.
